Coconut Chicken

1 tablespoons ghee
8 chicken thighs- in chunks
1 clove garlic
2 chopped chillis- or a teaspoon chopped chilli from a jar
2 tsp fresh ginger
2 tsp garam masala
400ml coconut milk
400g tin tomatoes
small bunch coriander
I cauliflower
1 clove garlic
1 small onion

Heat oil and fry chicken in batches
Fry garlic, chilli, ginger and spices for 2 mins
Stir in tomatoes and coconut milk
Add chicken and half the coriander and cook on low heat for 30 mins
About 10 minutes before it is done make the cauliflower rice

Cauliflower rice
Blitz a whole cauliflower, broken into florets in a food processor or just grate it. Add a little oil to a frying pan with a clove of garlic and a small chopped onion and saute in a frying pan for a few minutes till pale.Add your grated cauliflower and saute for 3-4 minutes till cooked.

Serve with coriander sprinkled over
