OK, I know we are not meant to eat too much processed meat but there is just a little in this recipe and it is a quick, flavoursome, and warming low carb soup for you!
2 tablespoons olive oil
1 head of cauliflower, broken in small florets
1 medium onion
2 cloves garlic
1 teasp smoked paprika
juice 1 lemon
handful of chopped parsley
2 litres veggie stock
4 tablespoons whole fat plain yoghurt to serve
Heat the oil in a saucepan, and saute the onion and garlic for 2-3 mins, then add the smoked paprika and the chorizo to bring out the colour. Then add the cauliflower and stock and cook for 5 minutes. Add the kale for 3 minutes and then serve with a little lemon juice and parsley sprinkled over & yoghurt on the side. Here it is blended, but you can leave it chunky if you prefer.
