500g cauliflower florets
knob of butter and a little cream
salt and pepper
300ml creme fraiche or soured cream
100g strong cheddar, grated. Half goes in the fish mixture and half over the cauliflower mash.
2 salmon fillets diced
500g white fish of your choice( I used skinless sea bass, but you can use any white fish or even half smoked and half unsmoked)
100g frozen peas
1 teasp fresh or dried parsley for the top when serving.
Cook the cauliflower in salted water till just soft and then mash it well with a knob or butter and a little cream- you want as smooth a puree as you can get.
Mix the creme fraiche or soured cream in a mixing bowl with all the fish, prawns, peas, half the cheese. When fully mixed, place it in a baking dish 9 x12 inches. 30 x 24 cm
Top with your cauliflower mash and the rest of the grated cheese
Pop in the oven for 30-40 mins till bubbling and lightly browned. Serve with parsley sprinkled on top.
I served with stir fried green & red cabbage and scallions, cooked the the wok for 10 minutes while the fish pie was in the oven.
